A Guide to Nova Lox: What It Is and How to Order It

Nova lox is cold smoked salmon, cured with a light salt brine and gently smoked. It's silkier and less salty than traditional belly lox, which is cured in a heavy salt bath and never smoked.

Hand sliced vs machine sliced

At Bagel Cove we hand slice our Nova to order. That means paper thin slices, cut on a bias, that melt on the bagel. Machine slicing is faster but the texture is never the same.

How to order like a regular

Ask for a quarter pound of Nova on an everything bagel with plain cream cheese, tomato, red onion, and capers. That's the classic. Add fresh dill if you want to feel fancy.
